The Spyderco Murray Carter Itamae Funayuki knife is the ideal kitchen knife for chopping, draw-cutting, and other general kitchen tasks. The blades on the Itamae series are expertly crafted from laminated steel of an Aogami Super Blue core clad between layers of USS410 stainless steel. This classic three layer build gives protection to the ultra-hard carbon steel center layer that forms the edge. Ground incredibly thin and straight for an unparalleled cutting experience the blade is shaped in the signature "Carter Elbow", a distinct taper from the spine to point that gives the tip extra reinforcement.

Literally meaning "in front of the cutting board," Itamae is an extremely prestigious title reserved for highly skilled sushi chefs. Consistent with that elite status, the Murray Carter Collection's Itamae Series -- the highest tier in the Collection -- proudly features premium materials and uncompromising craftsmanship.

The wa style handle is built from Burl G-10 and has black G-10 ferrules for an stunning look.  The octagonal handle ensures comfort and control.
