The Spyderco Murray Carter Itamae Nakiri knife is the ideal kitchen knife for push-cutting. The blade shape also allows the length to stay consistent even after years of sharpening. The special CTS BD1N blade is a high-carbon, nitrogen-enriched steel that gives a superior blend of hardness, edge retention, and corrosion resistance. Ground incredibly thin and straight for an unparalleled cutting experience the blade is shaped in the signature "Carter Elbow", a distinct taper from the spine to point that gives the tip extra reinforcement.

Literally meaning "in front of the cutting board," Itamae is an extremely prestigious title reserved for highly skilled sushi chefs.
